Lemon & Sour Cream Chocolate Chip Pound Cake (FOOD PHOTO SHOOT)

Happy Sunday again!

I made you a pound cake my friends and it’s not only infused with all the goodness of freshly zested lemons, but it’s also filled and covered with chocolate. Need I say more? As far as I’m concerned that seals the deal right there.

Chocolate and lemon may not be everyone's thing but I think everyone should give it a chance. So if you've never tasted it then you need to, What have you got to lose, right?

I just wanna let you know that I tested this recipe many times to get it just right for you guys.

True to so many pound cake recipes I’ve experimented with before, the few times I made this it was still molten in the center. Some people are into that but as I wanted this to work for you guys I kept adapting it and trying things until my fourth attempt came out perfectly done, yay! Okay, but if you’ve had the same problem with loaf breads and cakes too you can bake this into muffins instead which will also cut your bake time in half.

Alright, other than that, what else do you really need to say about a classic pound cake like this other than you just need to be eating it as soon as humanly possible!

**Ingredients

Cake:
1 1/4 cups sugar
1/2 cup oil
3 eggs
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla extract
1/2 cup sour cream
1/2 cup freshly squeezed lemon juice
1 tablespoon fresh lemon zest
1 1/2 cups all purpose flour
1 cup semi-sweet dark chocolate chips or chunks
Icing:
1 cup sugar
1/2 cup milk
3 tablespoons butter
1/8 teaspoon salt
1/2 cup milk chocolate
1/4 cup cocoa powder

Instructions

Cake:

  1. Preheat oven to 350 degrees F (180 C) then grease and flour a 5x9 inch loaf pan well. Mix oil and sugar together in a large mixing bowl. Add eggs and beat until combined, then mix in baking powder, soda, salt, and vanilla. Stir in sour cream, lemon juice, and zest until smooth then mix in flour. Fold in half of the chocolate chips. Pour the batter into prepared pan and bake for 45 - 55 minutes until a cake tester comes out clean. About halfway, 25 minutes, through baking remove cake from oven and sprinkle the other half of your chocolate chips on top evenly. Cover the pan with foil then rotate the pan and return to oven. Once done, place cake on cooling rack and cool for at least 1 hour before loosening and removing from pan.
    Icing:
  2. Combine sugar, milk, butter, and salt in a small saucepan and bring to a boil over medium low heat while stirring. Boil for about 3 minutes then reduce heat to low and whisk in milk chocolate until melted, then add cocoa and stir until smooth. Pour while still warm over cooled cake and allow it to dry before serving.

Just loving the flavour combo you have going on in this Pound Cake! Wish I could eat a piece right now :-) . Trying to catch up on missed posts over the weekend here. Now I can agree with you absolutely, lemon with chocolate really works. The acidic content cuts through the sweetness of the chocolate. I make a rich chocolate fudge cake with Belgium chocolate ganache; both parts are made with lemon juice and it is so moist and yummy. Must post that one in the near future. I have actually saved your recipe to my favourites bar it looks so yummy. Will definitely make it.

Those pictures are amazing! Once I have a better camera I'm coming to visit you for a crash course hehe! But first get a camera... Cambodia is a bit behind on its photo equipment.... time for a trip to Hong Kong or Bangkok I would say! have a great week!

My Dad has been to both Hong Kong and Bangkok. It was 30 years ago, but he said that he'd much rather go to Hong Kong. He said it was one of his favorites.

Here's hoping for some teaching time in the future

Hehe and your dad is so right! Hong Kong rocks! If it wasn't so expensive I would love to live there for a while. Have been to Bangkok a few times... though I always had great fun since we met up with friends, I'm not wild about the city! Have a great week ღ ღ ღ
